Homemade Mac and Cheese… I have been wanting to make this for a long time. Because it is not only a comfort food but it is also kid-friendly. And with two picky eaters at home these type of recipes are important.
Since my husband has a few days off, I have been taking advantage and spending a lot of time in the kitchen. While I am cooking he’s spending time with our littlest, and when I’m done we get to eat a delicious meal. It works out for everyone! 😉 On to the mac and cheese…
So, I have said it before, in our home I cook (almost) everyday. Though there are times when I don’t know what or want to cook. On days like these I used to run to the grocery store and grab a rotisserie chicken. Being the DIYer that I am, one day I said no more – since this baked chicken recipe has been a favorite.
I spotted the whole chickens while shopping for meats one day. At that moment a light bulb went off in my head – are you visualizing this?! I pulled out my phone and searched for whole chicken recipes on Pinterest. (While most people ‘Google’ their searches, I turn to Pinterest for mine, 90% of the time).
I found many recipes, so I grabbed a chicken and took off running, ok not quite but you get the point. Since that day, I have made my own baked chickens.

It took me about five to ten minutes to prep. Once I gathered all the ingredients, I patted the chicken dry with paper towels and seasoned under the skin.

On Sundays I usually make the best dinner and sometimes even make dessert. This last Sunday wasn’t the exception. The best part was that dinner took me under 20 minutes to complete… And no, you don’t need a grill to cook steaks.
I love making and eating pasta dishes. They are delicious and usually quick to make. This Shrimp Scampi is not the exception. It was ready, from start to finish in under 30 minutes.
I started by cooking the pasta according to the instructions on the package.
Living in Texas has many advantages, one of them is its diverse cuisine. In Panama, we don’t eat many of the Mexican dishes that you find here. So, I learned a lot about Mexican cuisine with my husband – who is of Mexican descent – and by visiting different Mexican and Tex-Mex restaurants here in Houston.
Luckily the first time that I decided to make enchiladas, my husband was home; and wiling to teach me how he learned to make them from a cousin.
It’s an easy recipe because you don’t have to make the sauce or tortillas from scratch. Quite frankly, I don’t know if I am that talented. Though, I would not mind trying my hand at it and learning something new.
To make these easy enchiladas, I cooked, seasoned and shredded chicken breasts. Then mixed the shredded chicken with cheese.
