It’s day 9 of the COVID-19 lock down here and while I cook for my family nearly everyday, I have had to revisit some recipes here on the blog to get some ideas for the coming days. My search lead to think of rounding up and sharing a few of my favorite recipes here and on my social platforms. In hopes this post is of some use to you. Whether your try some of these now or pin them for later! This is assuming that you’re like me, no longer knowing what day it is or what to feed the family. π Let’s start with these five Tex-Mex recipes which are sure to please just about anyone. π
Pork Carnitas Tacos
This carnitas tacos recipe is one of the most pinned on my Pinterest profile and most visited pages here on the blog. It is one of my favorites, because it doesn’t take much effort and it’s absolutely delicious. To complete the meal, I often make a side of rice which is easy to make. But if you have doubts I can share my method in the comments below. A useful tip, I also make canned beans, because Goya has some delicious canned beans options. π
Burrito Bowls
I will admit that the first burrito bowls I had were are Chipotle. Since learning to make my own, I think twice about taking a tip there. The ones I’m sharing in this Chicken Burrito Bowl recipe can easily be substituted by any meat of your choice. So don’t be shy to give them a try.

Shrimp Tacos
Shrimp Tacos are one of my favorite! Maybe it’s just me, but I like to think that these are on the leaner side when it comes to Tacos. π But even if they’re not, they are still delicious. And this shrimp tacos recipe is the best because it’s ready in under 30 minutes. You could literary make it right now!
Green Chile Chicken Enchiladas
Enchiladas are something that I learned to make because my hubby loves them. He was in-fact who taught to make them. Surprisingly, enchiladas don’t take that long to make – at least this Green Chile Chicken Enchiladas recipe doesn’t. π
Β Chorizo, Egg & Potatoes Tacos
Tex-Mex recipes for breakfast? Well, yes! If anyone has never had a breakfast taco or burrito, they’re missing out. This Chorizo Breakfast Taco recipe is one that we make about once a week. Because we love tacos. π It is super easy to make, I promise!

I just commented on someone else’s post that my go-to mexican spots are currently closed (and not doing to-go orders), so I’m DYING right now. I’m totally going to check these out for the weekend!
My husband and I basically combined the first two meals earlier this week and did carnitas burrito bowls. They were insanely delicious! I love a good tex mex meal, that’s for sure. These are awesome suggestions!
