Lately, I have been trying to take steps to eat better and be more active. You may have noticed by last week’s posts! This Cobb Salad is proof that you can eat good while trying to be healthier.
So, this week I will continue on this getting healthy topic, and bring you a salad recipe that I made and another recipe from a friend.
This is my very own cobb salad recipe, inspired by photos of other cobb salad recipes from Pinterest. Though, I am not sure what took me so long to try this type of salad, am I glad I tried it. Truth be told, I think it has to do with the fact that most cobb salads usually have eggs in it. The only salad that I liked – notice the past tense – with eggs was my mom’s Panamanian potato salad. 🙂 I am now open to adding eggs to my salads; baby steps…
In order to make the cobb salad I used romaine lettuce – this is my preferred lettuce. I mean, I will eat others, except for iceberg lettuce. Why? You ask! It started after my husband pointed out the difference between iceberg and romaine lettuce. Since, I have not bought iceberg lettuce. I also used chopped ham, bacon, tomatoes, eggs, and shredded cheese.
While, I would say that boiling and cooking the bacon was the most time consuming part for this recipe. The salad was ready in under 20 minutes.
