So, I have said it before, in our home I cook (almost) everyday. Though there are times when I don’t know what or want to cook. On days like these I used to run to the grocery store and grab a rotisserie chicken. Being the DIYer that I am, one day I said no more – since this baked chicken recipe has been a favorite.
I spotted the whole chickens while shopping for meats one day. At that moment a light bulb went off in my head – are you visualizing this?! I pulled out my phone and searched for whole chicken recipes on Pinterest. (While most people use ‘Google’ for their searches, I turn to Pinterest for mine, 90% of the time).
I found many recipes, so I grabbed a chicken and took off running, ok not quite but you get the point. Since that day, I have made my own baked chickens.
Let’s get to the baked chicken recipe.
It took me about five to ten minutes to prep. Once I gathered all the ingredients, I patted the chicken dry with paper towels and seasoned under the skin.
Then, drizzled oil all over the chicken and rubbed on the remaining ingredients. The oven was pre-heating as I prepped, and was ready by the time I finished. I added water to the baking dish, covered with foil and baked at 375°F for 1.5 hours. Once it was cooked, I removed the foil and placed it back in the oven for an additional 10 minutes at 400°F. That’s it.
While it may be easier to pick up an already cooked chicken. I find this method to be a no brainer. I literary prep, stick it in the oven and go on to do whatever else I need to around the house, until the timer goes off.
