Living in Texas has many advantages, one of them is its diverse cuisine. In Panama, we don’t eat many of the Mexican dishes that you find here. So, I learned a lot about Mexican cuisine with my husband – who is of Mexican descent – and by visiting different Mexican and Tex-Mex restaurants here in Houston.

Luckily the first time that I decided to make enchiladas, my husband was home; and wiling to teach me how he learned to make them from a cousin.

Secret to Easy Chicken Enchiladas
It’s an easy recipe because you don’t have to make the sauce or tortillas from scratch. Quite frankly, I don’t know if I am that talented. Though, I would not mind trying my hand at it and learning something new.

To make these easy enchiladas, I cooked, seasoned and shredded chicken breasts. Then mixed the shredded chicken with cheese.

I cook at home for my family almost everyday but when we go out to eat there’s a handful of restaurant that always make the list.

Churrascos among my top choices and yes it is family friendly. We have been on several occasion, mostly for lunch. I recommend this place because although of its upscale atmosphere, the prices are affordable. The food is delicious and the drinks are cheap. Speaking of drinks, they have happy hour everyday, from 4PM to 7PM. There are several locations in Houston but the closest to all the Super Bowl activities is Churrascos River Oaks; Churrascos Memorial and Churrascos Westheimer are not too far.

Foyer Reveal

The entryway of a home is one of the most important places, as it sets the tone for what your guest can expect the rest of your home to look and feel like. I dreamt of decorating this space from the time we signed the contract to have our home built.

When we finally moved in, my priorities had shifted and at some point decorating this area fell to the bottom of our to-do list. The foyer, looked so uninviting; nothing like what I had visualized.

In an effort to tackle this area of our home, I began by adding a bench. I opted for a bench over a console table because I personally feel that tables become a landing places; filled with phones, keys, toys, etc. I wanted to avoid this and the bench has actually worked perfectly. It is mostly decorative because we don’t use it much, but this means the area stays clean.

Beef Sliders Recipe

The first time I made sliders was over a year ago. In fact, it was for the baby’s first birthday party (funny thing that we call her a baby and she’s almost two years old). Guests gave me good feedback, when I made these then. And my family loves them so much that I’ve continued to make them.

It’s an easy meal, only involving a handful of ingredients and it’s done – from start to finish – in abut 30 minutes. I’m a true fan of quick meals. I have also made this recipe with ground turkey. And if tweaked a bit, you could possibly make it with pulled pork and other meats. Though, I have not personally ventured from ground meats yet.

Intentional Prayer

This morning, I shared a simple but powerful image on Instagram, with the word Pray on it. It was something I felt in my heart but also seemed appropriate for a day like today, Sunday.

Coincidently, today’s message included these same words. Our priest advised that we set aside 15 minutes each day to dedicate to prayer. He went on to describe what the typical day for most working parents looks like and how busy our lives are. And realized that 15 minutes of prayer is not something that most of us will actually take the time to do.
