If I’m being honest, I use Vidalia Onions for most of my favorite recipes, when they’re in season. There is just something about the taste of sweetness these onions add to every meal I cook! Especially those meals that bring loved ones together like blooming onions, onion rings, caramelized onions dip, just to name a few… These onions are only available seasonally, but it’s a treat to look forward to once the spring and summer months come around. You can typically find them in stores through August or September.

Making the Vidalia Onions Chili

You will need a handful of ingredients but you probably have most of these already at home. If not, make sure to shop for Chili beans, jalapeños, vidalia onions, garlic cloves, canned diced tomatoes with green chilis,  tomato paste can, chili powder, oregano, garlic powder, salt and pepper.

Once you have all your ingredients, you can start by adding oil to a pot on medium heat. Adding vegetables and cooking until soft – do not add the diced tomatoes yet. Then add the ground beef and cook until no longer pink. Then remove from heat and drain. Return to the stove at medium heat and mix in all the seasonings including the salt and pepper. At this point add the water, canned tomatoes and tomato paste. Mix it well until the paste has dissolved. Continue to cook on low to medium heat for about 10 minutes. Serve warm with sour cream and jalapeño rings if desired and enjoy!

  1. Such a bummer that I’m super duper allergic to onions. This sounds delicious! I know my husband would at least be able to enjoy it.

  2. This recipe is great timing! We have a subscription to Misfits, and we have a lot of onions on hand. Now I know what to do with them. Thanks for sharing the onion love! xo
