Celebrate St. Patrick’s Day with these Easy to Make Lucky Charm Cookies

St. Patrick’s Day is this weekend! That means it is also mid-March.. where is time going? Back to St. Patty’s Day. I thought I’d help you celebrate by sharing this super easy to make Lucky Charms Cookies recipe. All you need is a box of Lucky Charms cereal, a package of sugar cookies, one egg and butter. That’s unless you want to make your own dough, then keep scrolling for my favorite sugar cookies recipe.

Making the Cookies

First, separate the marshmallows from the cereal (I did about 1.5 cups) and set aside. Next, prepare the cookie dough per instructions. The package that I got only called for 1/2 cup of butter and 1 egg. Once the dough is prepared, mix in about 1 cup of the marshmallows. Save the 1/2 cup to top the cookies and garnish. If you’d like to make your own dough from scratch, I recommend this recipe. I have tried it and it makes good sugar cookies.

Once you’ve folded the marshmallows into the dough, use a teaspoon to drop cookie dough onto a baking sheet. Make sure to place them about two inches apart. Bake at 350 (or temperature on your package instructions) for about 8-9 minutes. Remove from oven, they will continue to bake on the baking sheet for a few minutes as they cool down. Remove from baking sheet once cool, top with extra marshmallows and that’s it! 😉

Making Strawberry Cream Pies

First, start with adding boiling water to a bowl and mixing in the Jell-o, making sure to stir until jell-o is dissolved. Then add the cold water and ice, the mix will slightly firm. You can set it aside for a few minutes to help it firm. Once the mix has sat out for a few minutes, you can whisk in the cool whip. It should now be fluffy and you can add the strawberries at this point. Now, add the filling to the pie crusts and refrigerate for a few hours. They will continue to firm in the refrigerator and once you remove them, you can garnish them as desired, with whipped cream, fresh strawberries, etc.
