Salmon is one of my favorite meals to prepare. I’ll admit that while in Georgia visiting my parents, I haven’t cooked much. I’m spoiled, I know. 🙂 So, I thought I could give my mom a break from the kitchen at least for a day and decided to make my salmon recipe for dinner.
First, I lined a baking sheet with foil paper, sprayed it with olive oil and set aside. Then I rinsed the salmon with cold water, seasoned with parsley, rosemary garlic and red pepper flakes.
I think we’re back to our normal schedule… So here’s another easy recipe! Taco Bowls with Old El Paso’s Taco Boats Flour Tortillas. I’ll be honest the first time I saw these, I thought’ “why not just use regular tortillas.” I bought them anyway because I had a crowd at home, and it seemed like the perfect quick meal to feed everyone. We liked them so much, that I have made a few variations since.

Making the Taco Bowls
First, I set the rice to make. Then sautéed onions and jalapeños, mixed in beef and taco seasoning; cooking until browned. I lowered the heat and added the salsa, making sure to mix it well. Then, heated the taco boats according to the package instructions.
Chicken wings are a must have here at home. They’re super easy to make, so I make them about once a month. And they don’t need to be thawed out which is great. If I haven’t decided what to make for dinner on any given day, I can take these out of the freezer and have them ready in under an hour.
While browsing around Pinterest I found this Cajun Chicken Wings recipe and decided to give it a try. It was delicious by the way.
It’s taco Tuesday! And while this is NOT a taco recipe, it’s the same cuisine so keep scrolling. 😛 Last week, I made these super easy and delicious burrito bowls, they didn’t require much effort at all.

Rice and Chicken
First, I made about a cup and a half of rice. While the rice was cooking, I seasoned three chicken breasts with a little bit of adobo, minced garlic, salt and pepper to taste. Once cooked, I chopped each breast, added a bit of cilantro and set aside.
Making lobster tails? That was a definite first. Really, how many people think the lobster is a fancy meal?! I’m raising my hand on this one! It’s like steak; a special occasion meal.
Quite frankly, I never thought that lobster was affordable enough for me to buy and make at home. But while shopping I noticed the promotional price on the lobster tails; and I had to buy some.
I’ll confess that I got ahead of myself and bought the tails without having a plan on how to prepare them, but making them wasn’t as hard as I thought it would be.

Cut through the top part of the tail with kitchen scissors. Then flip and crack the ribs through the bottom to open up the shell and loosen up the meat.
I am not going to lie… Pork Chops are one of those foods that I don’t like to make. Why? Because, I had not found a good way to cook them. I mean, I have cooked them but never gotten the flavor that I was looking for.
Then I got online and started searching and found a few ideas that I could try. This is what I ended up doing… Southern Style Pork Chops.
