Soups and Salads… I had this idea of only eating soups and salads for five days as some sort of cleanser last week. Especially since I had been eating out way too much the week before. See, I tend to cook most days and while I make no claims on how healthy my cooking may be, I feel like it’s better than eating out. Then there are days that all we do is eat out and after a few outings, I always feel a certain anxiety and need to get back to making home cooked meals.
Shrimp & Bacon Salad
For this salad, you’ll need lettuce, cabbage, carrots, shrimp and bacon. Cook the bacon and shrimp, this will take about 15 minutes. Chop the other ingredients and set aside. Once the meats are cooked slice the bacon into small pieces then serve meats over salad. I prefer to serve the shrimp whole but chopping it would be ok too.
Chicken Cobb Salad
For this salad you’ll need 1-2 chicken breasts, two eggs, lettuce and bacon bits. Cooking the chicken and boiling the eggs shouldn’t take more than 20 minutes. Once those are done, you’ll slice the chicken, crack and slice the eggs into round pieces and serve over the salad. Ps. I used a Chipotle dressing on the salad.
Bacon Chopped Salad
For this salad you’ll need lettuce, cabbage, carrots, cranberries and bacon. Cook the shrimp and slice once ready, serve over the salad and top with dried cranberries. A balsamic vinaigrette was perfect on this salad.
I know you’re wondering if I was able to commit to five soups and salads… My answer is yes and no. While my idea was to eat a light breakfast; then a soup or salad for either lunch or dinner. This is what my eating schedule actually looked like.
Day 1 – Chicken Cobb Salad + Cajun Sausage Soup
Day 2 – Shrimp & Bacon Salad + Chicken Tortilla Soup
Day 3- Bacon Chopped Salad + Chicken Soup
Day 4 – Chicken Tortilla Soup + BBQ
Day 5 – Cajun Sausage Soup + Steak Rice Bowl
Eating five soups and salads was not hard because I made a variety. In fact, I had shared some delicious salad options before. The problem was my social calendar. On day four, we had plans to attend the cook-off at the Houston Rodeo and I had no plans to miss out on the bbq 😛 This affected my pallet for day five because I ended up making rice bowls for my family and just couldn’t resist. I have joked about this on Instagram before, but I feel like I am addicted to rice y’all, I could eat it everyday. I’m leaving you the recipes to each salad along with the images below. 😉

That shrimp and bacon salad looks SO GOOD!!! I don’t think I’ve ever tried those two together before in a salad.
